Oatmeal Breakfast Bars

This is my new favorite simple recipe! These oatmeal chocolate bars taste amazing plus they are dairy and gluten free. It is perfect for an afternoon snack, dessert, or breakfast. I got the recipe from erin lives whole but I switched some ingredients. Let me know if you end up making them and enjoy!


recipe:


3/4 cup blended oats (oat flour)

1 cup old fashion oats

1/2 tsp. baking soda

1/4 tsp. salt

1/2 cup coconut oi

1/2 cup coconut sugar

1 egg

1 tsp. vanilla extract

2 tbsp almond milk

1/2 cup chocolate chips (I used Lilys sugar free)


instructions:

  1. Preheat oven to 350F.

  2. Grease 8×8 inch baking pan with coconut oil

  3. In a medium bowl mix together flour, oats, baking soda and salt.

  4. In a large bowl beat coconut oil, coconut sugar, egg, and vanilla

  5. Add dry ingredients into wet and stir in almond milk. Then add in chocolate chips.

  6. Pour batter into pan

  7. Bake for 13 minutes and when cooled cut them into squares

  8. enjoy:)
