Who doesn't like a healthy pancake recipe? I lovee pancakes and it took me a while to expert a recipe! This recipe is gluten free, dairy free, fluffy, and so delicious! Also, it makes you feel energized instead of stuffed. The key is to add extra cinnamon!
Also I have made cinnamon swirl pancakes, chocolate chip, banana, and blueberry pancakes with the same recipe!
Recipe (serves 1):
1 mashed banana
1 cup gf oat flour (blended oatmeal)
1 cup almond milk (or milk of choice)
1 egg
1/8 teaspoon baking soda
1/2 teaspoon baking powder
1 tsp vanilla extract
lots of cinnamon! (I just eyeball it)
Original pancakes:

Blueberry Pancakes:
The key for blueberry pancakes is to use frozen blueberries!

Cinnamon Swirl pancakes:
I used the same recipe but I added a sweet cinnamon sauce inside the pancake. When my pancakes are almost ready to flip, I drizzle the sauce all over the uncooked side. Then I flip the pancake!
Sauce recipe:
- cinnamon
- almond milk
- coconut sugar
Homemade frosting:
It is hard to notice because it melted, but I added a little frosting on top!

Chocolate Chip Pancakes:

Recipe (serves 1):
