PUMPKIN BREAD (muffins too)

These muffins are so fluffy and sweet! It is the best (and easy) fall recipe. I swear once you make these, you will never need another pumpkin bread recipe again. The recipe is below and was inspired my Erin Lives Whole!


Recipe:


2 eggs

1/3 cup coconut oil

1/3 cup maple syrup

1/4 cup honey

1 cup pumpkin puree

1 tsp vanilla

1 1/2 cups gluten free all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1 tbsp pumpkin pie spice


Put in the oven for 25-30 minutes at 350 degrees or 45 minutes for loaf.

(Whisk together egg, oil and sweeteners then add vanilla and pumpkin. In a separate bowl add all the dry ingredients together. When done, combine both dry and wet ingredients together.)








Suggestion: Add Trader Joe's Pumpkin Butter on top!
